Recipe: Kangaroo Tail Stew

This is an Australian Outback recipe…

1 kangaroo tail,
4 potatoes,
2 onions,
1 carrot,
1 parsnip,
salt and pepper.

Remove the skin from the tail. Slice the onions. Brown the meat lightly by frying with the onions. Cut potatoes, carrot and parsnip into fairly small pieces. Place in a pot with 1 cup of water and seasonings.

Cook until vegetables are tender.
